How to: Make a simple, special salad

And a-yes, this simple special salad does contain the infamous leafy green... spinach.I honestly enjoy this salad so much. I'm all about easy and tasty, less work and more tasty is basically my life goal in the kitchen. So this bad boy here checks off both and has rightfully earned its place as my right-hand salad. And well, I'm sure that if you're not allergic to any of the ingredients, then you will enjoy this salad. The toasty almond with the  sweetness of the dates, the crunchy pita bread with the zap of the onion. Mmmmm.

What you'll need:

  • 1/2 Red onion
  • 3 Pita bread
  • 300g Spinach
  • 10 Dates
  • Handful of Almonds
  • Olive oil
  • Lemon juice (fresh or store-bought)

And a-here's the steps, my pretty.

Firstly, cut the pita bread into smaller pieces.

Pita bread (diced)

Heat up some olive oil in a pan and fry these babies up with a dash of salt . I generally cut extra because I always end up eating a handful while I'm cooking them. In fact maybe just do yourself a big favour and cut a few extra whole pitas. Only lookin' out for you.

Pita bread (fried)

Right after you've got those in, throw in a handful of almonds with the pita breads so that they can toast at the same time. No, this is not some secret flavour-giving hot tip. It's just because I'm lazy, I admit it.

(You can see below that I did the almonds separately. What a fool I was!!! Those precious minutes which I will never see again! DON'T BE A FOOL LIKE ME, I MADE THE MISTAKES SO YOU WON'T HAVE TO!!!)

Almonds (toasted)

Now let those sit on low-medium heat for a few minutes. In the meantime, slice up that red onion nice and thin. BUT, don't forget to toss the pita bread/almonds (ingenious) every so often until the pitas are golden-brownish and c-c-c-rispy.

Red Onions (chopped)

Slice up the dates. What you see below is some mighty fine juicy dates. Aim for the below kids, aim for the stars.

Dates (chopped)

Now it's time to bring out the spinach leaves. Throw everything into one big bowl, drizzle with olive oil and the lemon juice...

Spinach leaves

And a-stir it, not shake it. We ain't going for Bond here, son, this a kitchen. We makin salad.

And a mixin

I know the parting shot isn't great, average at best. BUT THAT IS WHAT HAPPENS AFTER YOU'VE EATEN ABOUT 30 PITA CHIPS. YA AIN'T GO NOT WORRIES, ALL ABOUT THAT MEDIOCRE LIFE. But rest assured this salad had a great conversation with my mouth before my belly gave it a warm welcome, I'm sure. Hope you enjoy it too. :)

Eet smakelijk!
